Buko (coconut) PIE

This is "BUKO PIE" or Young coconut meat PIE. I was laughing so hard when my husband cannot pronounce it right, it sounds like "bakokai," shame on him cause he is Filipino, lol. He like's it and want me to make some more.

Here's HOW:
Crust
2 cups Flour
1 stick butter cold
1 tsp salt
1 tbsp sugar
4-8 tbsp cold water

Blend salt, sugar and flour in a bowl. Cut cubed chilled butter and add to flour using blender or food processor, add water. Divide dough into two for pie crust and other one for top.

Filling:
1-2 12oz jar sweet makapuno (Asian section or Filipino Store) Drained
1 can condensed milk or 1 cup sugar and 1 can evaporated milk
2/3 cup corn starch
1 cup water

Combine all ingredients and cook stirring constantly on low until thickens and let cool. Pou in to pie crust, cover with the top dough, fold edge. Bake on 350 until slightly brown about 30 minutes.
