He Call me CLOWN!

Sometimes I am so clumsy. I am the one writing checks for the bills and place postage and check the return address. I was so frustrated when an important bill came back with a note of "no postage". It meant it will be now under "late payment", the husband was frustrated too and mad on me, and take note it's New Years Eve. We did not talk for a while, then he ask me to come out the house because he is doing fireworks. I hate fireworks, I do not like the smell of it.
When I came out and hug him he call me "CLOWN". Clown is sometimes funny, sometimes scary and sometimes Stupid and frustrating ;)). Hope his CLOWN can make him happy on the years to come hahaha.

How's Your 401K?

Have you check your 401k investment lately? It was so depressing to see each statement that comes in, sometimes we just leave it unopened because we are just scared of the truth watching the figures drop down so rapidly and so huge.
This year it drop as much as half, it really made me scared to receive the next statement. Hopefully the economy will be better on this coming years and we all can bounce back from 'Global Crisis'.
Maybe we all think the same thing, to withdraw our 401k investment. But most of the financial articles I have read that said, if you are retiring 10 years from now better not withdraw it and continue on contributing to it. Invest more on stocks and save a lot more, cement well your investment for a bright future.

It's taking me a while to update my blog because there are so many distractions happening in my life these days. Honestly I lost my focus on my blogging for some reason, though I still love blogging. There are so many things to do and think offline.

My travel fairy surprised me once again. I never expected anything from her, I feel so bad that I can't sent her a Christmas present because she never gave me her physical address. I was thinking to send a Christmas card to her mom and asked her mom to please read it for my travel fairy lol.
She made a joke and place a Hawaiian chocolate, it's like a return to sender chocolate. My husband was confused and ask me why she sent you Hawaiian chocolate and chuckle and tell him "you really don't know my travel fairy, she have lots of joke nerves in her system lol. Oh I love everything my dear travel fairy I was really so happy of all your presents, and I show the husband the pantie camouflage and he said "can I try it" lol. The humor of travel fairy is really contagious hahaha. Thank you so much my dear Lyn.

Center Piece

I have read a lot about the financial downfall and all their advice to survive the crisis is "Be Creative". I follow their advice and made this center piece from the items that was left behind in our house. I realized that we have 3 candle holders and I dress it up with festive wire and ribbons. Since our Tree is white Christmas so I use the extra red ornaments and place it on the table. My best critic which is my husband love the tree and the center piece though I cannot make it look on photos the way we saw it personally.

Butter Mochi

Looks like I am bored today ;)
Actually a little bored and I end up baking this dessert to suit my sweet tooth. Yesterday I was scanning my recipe book and found this, since I have the ingredients I decided to give it a try, its yummm.

Butter mochi
1/2 c butter
2-1/2 c sugar
3 c milk
1 tsp vanilla
1 pkg (1lb) mochiko (sweet rice flour)
1 tsp baking powder
5 eggs beaten
*1 c flaked coconut

Melt butter and let cool. Combine mochiko, sugar and baking powder. Combine remaining ingredients and stir into mochiko mixture, mix well *you can add the coconut on the mixture or use it as garnish. Pour into a 13x9x2 inch pan. Bake for 1 hour at 350, *after 30 minutes sprinkle on top the coconut as garnish and cook for the remaining 30 minutes. Cool and cut into squares and place on muffin cups.

Love Coffee

We love coffee from coffee shop but my husband and I realized that we are spending too much buying coffee every day. We need to cut back and decided to make our own coffee at home; sadly we cannot exactly get the same coffee shop taste. We search for quality coffee makers and bought one from capresso, now we love our home made coffee taste better than the one at coffee shops and we can have as much coffee as we like each day.

I am not so crazy about cake though I love watching cake decorating shows. Maybe because my husband and I are not so pond of eating cakes. We love pies though and cookies. But I baked a lot of cookies, it's my personal favorite and I want to make it a little fancy and decorative sometimes. Here is one example of my flower cookie, supposed it should be red in color but I am playing with the ginger snap cookies. Festive right!

Failed Again

I been working wit dough for my buns for a while know but still I can not get how to make it the way I really want it. I am sure that store bought bread are perfect because they use a lot of preservatives and enhancers. I wish I can make a perfect white, fluffy, soft and just right buns. I am searching of recipes for perfect buns but I just get frustrated each day. I am working and kneading the dough good but still it does not come out the way I wanted. Oh well maybe I will just stay on cookie making. :(

Poor Bird

I found this birdie by the sea shore this morning. I though the bird was just sun bathing on the sand and under the sun but when I attempt to walk close to it, it did not bother to fly away. I am sure this bird is hurt but I am scared to touch it, I don not know if the bird is sick or has disease. What a poor bird.

Colds is here

I am not feeling so good today I might be the next one to catch colds in our household. Hubby got cold since last week and still coughing, last night I am feeling tired so I took Tylinol. Today I am still feeling down but I walk to the store and buy some ingredients for the bun that I am making and I also bought a Betty Crocker booklet about holiday goodies recipe, the cookies looks yummy that I want to bale them all lol. Maybe I will be baking today Lyn ginger snap cookies, she had posted a recipe on her food blog.

The Power of Internet

I can remember that internet was introduced in the Philippines on late 1990s and I get hook right away. I met a lot of friends online that I have met personally, since then it became part of my life.
I am happy that I am reconnecting again with my high school batch mates and old friends and catch up with our lives through the help of internet.
I really appreciate internet because it is very powerful and useful tools as long as you will use it on the right way.

This pumpkin pie is one of my favorite pie, the other one is apple pie. This one is really good the crust is so perfectly delicious with bites of chopped walnuts on it that make each bite more crunchy. I only like to eat pumpkin and apple pie because of the spices in it that makes it more yummy. The combination of cinnamon, ground ginger and pumpkin spice makes this pies insanely delicious.

Okra Fritters

I saw this recipe on "Paula Deans southern cooking" on food network channel, which is one of my favorite channel. Cooking is one of my passions, sometime when hubby asked me to do something for him and I can't make it perfect he joke on me saying "just cook". Well I am glad though because he love my cooking. This okra fritters is so good, and I took the fresh okra from my backyard veggie garden.

Well can I call it a lazy day? Yesterday hubby just stayed home and worked with our gate. I washed his truck while he is doing the gate, it was so hot yesterday. Washing the truck for more than an hour under the hot sun gave me a suntan.
Today I just spend my day doing scrapping again, and here it is. I'm trying to create background layout for my FS.
It's already thanks giving next Thursday. Time to gobble gobble gobble.

oowy gooey oatmeal cookies

As always it's a "manic Monday". Monday is my baking day, my laundry and house cleaning day. I baked buns with hotdog and corned beef, especial request by hubby for next week is "kalua pork bun". Today I baked oatmeal cookies too and my great critic love it, that means it's yummy and it is. I find the recipe on a label but I alter it my way ;), It tastes like starbucks oatmeal cookie.
Here's how:
3/4 shortening
1 cup brown sugar
1 egg
1/3 cup milk (if you have evaporated milk much better)
1 tsp vanilla
1 cup flour
1/2 tsp baking soda
1/2 tsp salt
1 cup raisins
1 cup coarsely chop walnuts
3 cups quick oats, uncooked (but I alter it with 6 packets of instant flavored oatmeal like banana bread, apple cinnamon and cinnamon roll, two of each flavor)

Heat oven to 375F.
Combine shortening, brown sugar, egg, milk, and vanilla in a large bowl. Beat at medium speed of electric mixer until well blended.
Combine oat and flour, baking soda, and salt. Mix until well blended, stir in raisins and nuts.
Drop rounded spoonful of dough 2 inches apart onto baking sheet. It makes 2 to 2-1/2 dozen.
Bake on 375F for 10 to 12 minutes or until lightly brown.
Mine was only 15 pieces cause I used ice cream scoop to even the size and I make it pretty big ones, Yummy.

Hotdog in a Blanket?

I was trying to bake "pan de sal" a Filipino dinner roll, but until now I cannot make it the way I want too which is moist and soft. I was looking around the store for bread conditioner or bread enhancer but unfortunately I cannot find any on the grocery stores, maybe i have to go on baking goods supplier.
Well since I have extra dough I try to make a hotdog on a blanket and my husband love it, now its part of his breakfast. The dough turn out to be yummy with hotdog but not too good as pan de sal.

Bottled Water Mania

America is consuming 30 billion bottled water per year. Consumer do not realized that most bottled water are simply tap water. And bottled water that left inside the car is believe to cause breast cancer in women, the plastic bottle release a certain chemical that can lead to breast cancer. Tap water from your kitchen faucet is much safer than bottled water and it is a lot cheaper.
Here in Hawaii, I can assure that we have the cleanest and safest tap water for drinking. In our household we are buying bottled water because we move in to a very old house with old pipes that make our water taste funny, but I trust our tap water than bottled water so I asked my husband to connect a temporary pipe from the main line to be use as our drinking water, until we rebuild our house. In that way we save money from buying "bottled tap water" and away from the danger of plastic bottle chemicals.

Halo Halo

Halo halo or "tropical fruit melange" is so famous in Philippines maybe because of the humid weather condition there. Halo halo means "mix mix", the ingredients include sweetened red mung beans, jack fruit, palm fruit, white kidney beans, garbanzos, plantains, yam, sliced of custard creme, corn kernel, evaporated milk, tapioca pearl sugar, 1 or 2 scoops of ice cream and shaved ice.
My husband love it so much especially during summer season here. What I am doing is buy bottled halo halo ingredients and just add shaved ice milk and a little sugar.

A New President

For the people of Hawaii President Obama's victory is much awaited, but before the precints where officially closed yesterday here in Hawaii, Obama was already declared as the Nation's 44rt President. Barrack Obama was born in Hawaii, he studied at Punahou School from fifth grade to highschool.
Last night was a historical night in the United States Presidential race. CHANGE happened last night, but President Obana still have a lot to prove to America.
I believe that he has the qualification to do his job as the next President of the United States.

Look OUT

This is one of the scenic look out by the East side of the Island. From this site here you can judge that Hawaii is formed by volcanic eruption million of years ago. When I travel this side I feel that I was traveling in time, you can see the layers of earth on the side of the cliff formed by the wind and wave. You can see Molokai Island from this side. What a Spectacular View.

This is the view of Waikiki 1 mile out the ocean. Waikiki is one of my favorite spot for my photography hobby. It just so amazing view of modern Hawaiian beach, one of Hawaii's trademark.
Waikiki is really pretty view from the top of Diamond Head crater, from the ocean or from Waikiki stripe.

Happy Halloween! BOO!

The weather is good today. I did not decorate for this Halloween but I have bought candies for the trick or treater's.
Suddenly the CPA called me up and need my help, so I did went to help him today. Hubby is somewhat busy on his job that he even come home so later for almost a week now, he is trying to finish his job with a deadline, he will work on weekend and I hope it's done by Sunday.
So I came home on bus and trying to arrived home before the kids go trick or teat, but I was running late because of the bumper-to-bumper traffic . Luckily I was able to catch up and gave all the candies to the kids, by eight pm trick or treat is done. Hubby still at job site, it gives me time to cook dinner for him.

A Healthy Salad

We love this Watercress tofu salad so much. It so simple to make, all you need are
Bunch of watercress about 3 cups chopped
1 small can tuna
1 firm tofu cut into cubes
1 big tomato cut into cubes
5 tablespoon sesame oil
pinch of salt and pepper
mix everything and its ready for you to enjoy.

Health Benefits; Sesame oil is a good vegetable oil, rich in mono- and polyunsaturated acids (PUFAs) -- the good kind of fat that cuts cholesterol. It is low in saturated fats -- the kind of fat that's bad for you. And there's more. Sesame oil contains two unique chemicals called sesamol and sesamine. They are very powerful antioxidants.
Watercress; is the new cancer fighter with antioxidants, a better protection against cell changes that can lead to cancer.

Update about my DAD

I was in emotionally stress this past week. But at least my dad is safe and soon to be home although he will still be in medication and a constant doctor's visit.
After one week in the hospital he is scheduled to be release today, they are just waiting at one Doctor to sign his release paper. They perform CT scan on him and their finding is he has a mild hemorrhagic stroke, dad is lucky because only one blood vessel has ruptured, he will recover soon.
I believe that everything happens with a reason, I am sure this is the time that he has to stop drinking alcohol and smoking and start living clean.
He is still slurry though but he is fine now.

Stray Kitten

I really have a heart for cats. We have lots of stray cats here in our place, I found out that there's two mother cats gave birth. Each of the cat's have three kittens, the other one abandon her kittens which make us so irritated during the night, it is so noisy crying all night.
Since I just discovered that there's another one by the rock file I told hubby that I have solution to it. I pick up the abandoned stray kittens and place it to the one with mother. I was surprise that the other cat adopt the abandon kittens and gave milk right away.
Actually this is one of our problem here stray cat's and chicken, hubby keep's calling the Humane Society but they just promise and never show up.

My HEART just Sunk

I have time difference from my homeland Philippines, they are 18 hours ahead, when it's 6am Sunday here, there is 12am Monday.
When I woke up this morning I grab my phone at the bed side table only to find out the saddest news in my life, my brother and sister text me that my Dad has stroke. At that time it's 2am there, I called my Mom to find out. My dad has mild stroke but they will go to the hospital tomorrow because at that hour of the night there is no transportation available for them, good thing it's a mild stroke. My mom told me that my dad is slurry and he can't move half of his body, he might have hemiplegia (paralysis of half of the body). My dad is only 53 of age but he was depressed few years ago due to a family problem that's why he turn himself into drinking alcohol and he is a smoker ever since I can remember. I talk to my dad on the phone he is slurry but I can understand what he is telling me, he said he went to a christening and ate roasted pork then when he came home he drink alcohol and take a nap after he cleaned the house, at 6pm my mom discovered him lying down and cannot move his body and slurry that's why she jumped into conclussion that dad has stroke. I ask my dad to promise me that he would not drink alcohol anymore after this and if possible he have to stop smoking. I was really crying, I love my parents so much and I am not ready to lose either one of them. My dad is a good dad, he teach me so many good things to be a better person.
I write it here because I felt that it will lessen the weight in my heart. I LOVE YOU DAD...

Cheese Stuffed Pastry

Lyn inspire me to create this dish. Actually last night I was making a chicken empanada with raisins and also I'm baking stuffed jalapenos. I have extra dough and extra filling for the jalapeno. I think I can use the jalapeno filling to fill my dough.
Cheese stuffed pastry was born and it is really good.

Filling; 6oz cream cheese room temp., 1 cup cheddar cheese room temp, 1 scallion chop. Mix filling ingredients and set aside.
Pastry; 2 cups flour, 1 egg beaten, 1/2 cup water, 1 stick butter melted, 1 tbsp granulated sugar, 1/2 cup flour for dusting.
1 cup cooking oil for frying.
Beat egg in a mixing bowl add water, melted butter and sugar mix well, add 2 cups of flour and mix until smooth. divide dough in 12 equal size or if you prepare smaller pieces divide dough in 16 equal size.
Using rolling pin form dough into round flatten pastry then fill with 1 tbsp mixture. Brush side with egg white and seal. Fry until golden brown. Enjoy

Poor Tomatoes

I have planted tomato months ago, when I found out that it has fruit, I took good care of it so much, I even took picture of it last week. The other day the fruit has started to ripen but still has green color on it and I want to wait till today to pick it, to find out that the stray chickens has feasted on my tomatoes. I was so furious that I run inside the house to get the air gun, what made me more furious is I don't know how to load pellets on the gun arrggg.

Educational Plan

I have talk to my aunt (mom sister) 2 weeks ago, she and her family live and work in Kuwait, the couple was working in Kuwait for almost 30 years now. She was so worried about the AIG insurance because she invested on life insurances and also educational plans for her kid's and in fact two years from now her eldest son will start using his college educational plan. She is so worried that her investment will just go into waste and it's a huge money for her. I assured her that she don't have to worry because a day before we talk the U.S government has already bailed out AIG, it's safe for now.

Stay Home or GO?

I SLIP my Mouth!

My husband just left home and after 5 minutes he called me, just informing that his daughter and grandson will come up here on Monday for the little boys mild surgery. He will undergo a mild hydrocelle hernia surgery, that's just one day and it's mild so he can just recover that day and flew back home.
I already know the last time they were here that the boy's father will come with them, and I don't need to accompany her daughter during that time. Besides I really don't like to accompany her when it comes to hospital things or doctors appointment cause she is drama girl lol.
Hubby: just want to tell you that daughter will come on Monday
me: I know, she don't need me cause the dad will come with them
hubby: (shock) who's boy's dad? who's coming with them?
me: your grandson's dad will come with them
hubby: why? (he is clueless that her daughter and the boy's dad is on and off, what hubby knows is they are separated for long time now, and there are lot's of issue in between, I know more than him)
me: .... oppppppssssss slip, don't tell your daughter that I tell you that, 'dang! slip...

My father's family side loves to cook, I get the passion of cooking from them and I am so proud that they are really good cooks in spite of limited ingredients and herbs but they still manage to cook the best food I've ever taste.
Well I never had a chance to ask for the recipe from my grandma though she's still alive but she lives so far from us.
This Empanada is one of my favorite pastry, I don't really know their ingredients but what I clearly remember was it's buttery, yummy and the pastry is crunchy, flaky, tasty and so succulent. I tried one time and bake it but honestly I didn't like it, so very different from my roots.
I remember it's fried. I was searching for it so long and wallah I found it. Of course I made it the family way.
4 slices of bacon, half of large onion, 1 tbsp cooking oil, 2 cloves garlic chopped, 1 pound ground pork or chicken, 2 tbsp ketchup,half tsp brown sugar, 1 cup sweet potato chopped, 2 tbsp water, 2 tbsp parsley or coriander, 2 tbsp soy sauce, salt and pepper to taste. 2 hard boiled egg chop.
2 cups oil for frying
1 egg white
2 cups flour
1 egg beaten
1 stick butter melted
1/2 cup water
1 tbsp granulated sugar
heat 1 tbsp oil in frying pan, add bacon onion and garlic stirring regularly for 5 minutes. Add meat and cook for another 5 minutes breaking up lumps with fork, add sweet potatoes, ketchup, sugar, water, soy sauce, salt and pepper. Cook until sauce is slightly dry, sprinkle parsley.
combine flour, egg, water, sugar and butter until well blended. Cut in 12 even sizes.
Flour your board, roll each into a ball then platen with rolling fin, fill it with 1 tbsp of filling mixture and place couple cuts of egg, brush edge with egg white and seal, to make it fancy press your fork on the sealed side to make a nice design.
heat oil and fry until golden and dry it on paper towel. Enjoy

Simple food for my SOUL

My breakfast yesterday was only a huge mug of coffee and a small piece of cornbread, I din't snack on anything after that. I make it a point when i'm home I will not cook so many sweets to snack on and I didn't buy too much snack. Maybe I'm trying to loose weight lol. Well at around 2pm yesterday I feel like my brain is not workin right anymore I need food fast, no more leftover so I end up cooking "sardines in tomatoe sauce and somen", yumm I cook just enough for me about 1 small bowl and I ate it with a little rice. I'm solve ;)

Home school or not

Well certified teachers are locked into a standards but home school parents can go above the standards. One-size-fits-all public-school classroom has failed and not all children develop at the same rate. Home schooling is a great alternative to children who are not yet ready to decode reading and grasp math concept to ensure that one-on-one instruction takes place so that the child can master this skill.
On the other hand their children will be isolated from mainstream issues and conflicts essential to growing up as well-prepared person.

HOT Chilis

I plant different kind of chilies in our backyard because my husband loves to eat spicy food and also chilies. I have Asian chillies, Thai chillies and Jalapeno. Now he snob my chillies because when he sits on his porcelain throne it feels chili hot down his butt lol.
Now I just pick up my chilies and keep it on fridge, the jalapeno I pickle them.

Sharks sightings

There was a lot of shark sightings in Hawaii this month and there are no specific explanation about it. Two weeks ago there was one shark attack reported. At the big island Hawaii the beaches were closed for days because of shark sightings, it was 6-14 footers tiger shark and last month they also sighted a 23 footer great white shark, that is scary. But sharks lives in water and if you saw one there are chances that 10 sharks had seen you already but just avoid you.
Maybe the reason of this shark sightings at shallow waters is its their mating season, there is no scientific prof about it but last year same month also has a lot of sightings too.
So when you go to the beach catching up the last summer month better be careful and watch for the sign posted.

Filipino Cuisine

I love cooking ever since I can remember, my grandma is a good cook, when there is wedding, occasions or feast they always call her to cook for them. I remember I think I was five that time that we went to a wedding and my grandma is the main cook and I'm watching them preparing the ingredients and cooking, her sister is also good on preparing sweet treats and local delicacies. I also remember they made cakes but due to lack of materials and ingredients they only do the local delicacies and chiffon cakes that they decorate with yummy icing made of confectioners sugar and egg whites. The process is so hard because they use the old fashion way no electric mixer and electric oven only convection oven on top of kerosene stove and great grandfa also have kerosene fridge lol.
I know that Filipino cuisine is so simple because we only use the ingredients that is available and inexpensive. But cuisine differs from which island and tribe you belong. On my father side they cook more like Spanish and I love it especially the Arroz de valenciana which my grandma cooks so good, oh the yummy and flaky empanada the best I ever taste, I love eating tamales which I don't know how they made it. On my mother side they don't have that much complicated food, all are cook on simple ways.
Why more on Spanish dish, because Philippines was conquered by Spaniards for 300 years and maybe the island where my father side, was concentrated by the Spanish and they pick in up and treasure the Spanish culture until now, in fact they call Zamboanga city as the 'Latin city of Asia' and if I'm right it's the only remaining broken Spanish speaking city in the Philippines, yeah broken Spanish because they don't have the Spanish grammar though but everything are almost the same.
Back to Filipino Cuisine, I have observe that many of Filipino dishes are mix in culture, I mean like the famous "Pansit" or stir fry noodle is a Chinese influence (introduce by merchant Chinese long before the Spanish came) there are lots of food that are Chinese too like dumplings, stir fried veggies and many more. Curried and spicy food I believe is a Malaysian influence. Paella, arroz de valenciana, afritada, caldereta, adobo, tamalles, empanada, roasted pig are influence by Spanish.
So what are the native Filipino cuisine? I'm not sure because each tribe has its own specialty and I'm sure that it is also influence by other Asian country.

Ms Piggy is SAFE

Yeah my little piggy bank is safe. On my previous post I decided to use piggy to buy a range. When hubby came home he said lets go to the store and I said wait my piggy, he then said "save your piggy I'm going to use the tax refund" ok then piggy is now safe and sound lol.

My Piggy, My Savior

When i was a little girl my mom teach me to save loose coins on piggy bank or simply just any container that can hold my little fortune. I come to love this idea and until now I have this fashion. If you save loose change it will accumulate to a good amount.
Well when I first came here i saw my husband loose change filled up on his bed side table. I get a big container and place it all in and until now its accumulating.
Our tax payment is so huge, that's the disadvantage of having your own small business I must say, I never though that we are paying that much tax this year, last year is much better though we even get a good refund but this year all I can say is OMG!
Well I need a new range and we have this monthly tax payment that worth two car loans. In order to help a little and get my stove I told hubby to bring me to coin counting machine later and after we go and get my stove. His initial reaction after telling him that, he laugh so loud that he can't believe me. Bad husband, I'm freaking serious lol.
Lesson learned: as always my piggy bank saves me.

I got this thing last night, Am I happy? yes and no...
Yes because finally I got a new baby...
NO! because I can't connect it with internet and today I run all over the place to make it work. I went to the internet provider office that end up they don't assist my problem the only thing I can do is call their technical support. I went to get a router and a cooling pad. When I came home I'm so excited and try to install everything so I can get internet on my lappy. Yes I got internet but how come I can't go anywhere, i type or anything else it goes to roadrunner which is the internet providers website grrrrrrr I call the technical support of our internet provider but still it didn't help at all, the call went for over an hour that make my ears so hot and also make me more upset because all the options didn't work. Last option call the store where I bought it and they said bring it down they will check it and if factory defect they will replace my lappy. That's why I don't want to purchased online cause if ever I get a defect electronic item its so hard to call them and return it, local store is accessible though.

Long Day

The other night I received a call from the CPA and he wants me to help him for two days, do some paper works and also deal with his one client which is Filipino, so my other job is "interpreter" lol, the CPA is a local Japanese and when he encounter a Filipino client he introduce me. I still be working with him tomorrow though, have to get up early.
Today after work I went to Ala Moana Mall, roam around a little and found cooks books but its heavy and husband didn't pick me up, so maybe tomorrow I can pick it up I love those cookbooks full of fancy food inside.

This are some of his catch last time he went to Molokai island, he gave some to his buddy. The other friend of his who go on the other boat are season fisher mans and expect they got plenty catch than my husband. He said he got one mahi-mahi but lost it on his hands lol.
Better luck next time, and my husband he was roasted by the sun and looks he lose weight on that overnight trip, actually that's 2 days and 1 night trip. I hope he will take a rest from fishing for awhile but fishing is only during summer, when its winter you will be toast by huge waves.

Pros and Cons of Taking a BUS

I have a truck but unfortunately I don't have enough guts to drive it especially on a busy hiways and freeways. Sometimes I run errands when hubby is working or fishing, with out any choice I have to catch the BUS.
Good thing about the bus when our trucks broke down or in the shop we can took bus and head home while waiting them to fix it. When I'm with my husband I'm sure I'm safe but when I'm alone, I don't know.
Bus is dirty because its a public transit, when I reach home after taking the bus I shower right away (am I germ freak?)
Expect to have an annoying seatmate grrrrrrrr, I don't talk to strangers but sometimes I respect them especially when they ask something or talk to me but my experience yesterday was horrible ever! an old man sit beside me and started to talk, I have a huge heart for this elderly people but not with a maniac old guy! he ask my number and said he will take me to a shopping spree, even I come down the bus stop his tailing me I gave him the wrong number so he will stop and I take the long and winding way home. What a desperate OLD MAN! I don't need shopping spree, he better buy a driver and car if he is really rich grrrrrrr.
Lesson learned! Never TALK to stranger again while on the bus! and gather all my nerve so I can drive my truck and avoid being harass by this maniac people without consideration and respect. I'm getting mad and angry thinking of that 65 year old guy.

My garden is almost a year old now and I have variety of herbs and veggies that I keep on cultivating, watering every afternoon and also I'm trying to replace the one I've harvested and introducing some more veggies seeds. Some part of the garden is already shady because I let the basil grow like bushes and also the lemon grass.
Suddenly I noticed that some of my plants are dying and it looks like an animal have skinned the plant bark and the leaves are damaged like a worm eat them. My first and only suspect are the wild chickens, they love eating my chillies from leaves to fruits. I place screens on my precious garden and its impossible that chicken will eat my green onions, sage, leek, and thyme. What happen to mu leek somebody is making fun of me! The leaves are almost gone, the sage has no trace at all the leave of the wild bitter squash that I let vine on the screen during summer to keep shade of my green onions was all massacred! BAD CHICKENS! But I was watching it closely for days and no chickens came to visit. What a mystery, (Nancy Drew on the Mission!) Today I finally realized that tons of LAND SNAILS are nesting in the shady wet hallow block that I use as soil barriers. BAD SLUGGSSSSSS, GRRRRRR I was fighting with the snails later today and gather them and throw them away.
I wish they won't come back I HATE LAND SNAILS you eat my garden! Tomorrow I will make sure that there's no more even baby snails on my garden.

I will make a sign "SNAILS KEEP OUT!" lol

12,000 Calories a day?

When I know that his taking in 12,000 calories a day I said "what will I look like if I'm the one taking in that much calories and I exercise less". I might be obese or something.
In Phelps career he need that much calories because he works out really hard, but he is not fat. Now I believe that swimming is a better exercise and might be you burn more fats faster when you swim. Hmmm it make me think to enroll swimming lesson because unfortunately I'm not a good swimmer lol.

Hubby and I are going fishing today, taking another off from blogging. Hope the weather is good today and not windy. I'm praying that I won't get seasick, I bought some doughnuts for me and couple of sweet snacks, we might be whole day out in the ocean. Hope we can catch plenty and variety of fish.
I might eat ginger before we leave, according to the Japanese ginger is anti-motion sickness, let see if they are right. A friend of my husband said he didn't get sea sick because he drink Sprite. I'll experiment everything and WISH ME LUCK!


Another pressure day! I have a lazy day today just relaxing and preparing for tomorrow's fishing trip. Suddenly my husband called me up asking why I didn't answer the CPA's call, hoe I will answer when he didn't call? My husband asked me to call the CPA because he needs information from me for the renewal of business license. I take my time and didn't call him yet because I already know my day will messed up, but my husband check me up again if I called, ok I will and sure enough my days to come is MESSED up. The CPA want's me to input all the bank statement on EXCEL or redo the QUICKEN, now my brain is in pain!
I don't know where to start I get confused on the formulas, I will go fishing the whole day tomorrow with hubby and the CPA want me to turn in my assignments on Friday... I'm sure I need couples days, I don't have magic wand and I'm not expert on EXCEL yet!

Two days OFF

I'm taking off today until tomorrow from blogging, I have to attend two days seminar workshop about EXCEL. For two days I paid almost $150.00, that's 6 hours of lesson per day. But I must say its worth the amount I paid, I have learned so many things about EXCEL beyond basic and I really appreciate it because I'm self thought. Tomorrow another module which is Advance Excel, I need to practice this program right away, the CPA keeps on pressuring me, and already gave me an assignment to be done with EXCEL , whew!
I'm thinking to go back school and get a degree in accounting (if only I listen to my dad!).
Back to the seminar, our educator is really funny and he keeps the class lively, its a good strategy though, we have fun at the same time we learned, since its not a boring class we want to learn some more. Hopefully tomorrow it will still be as fun as today.

I was trying to make my own header and layout but I get frustrated, I don't have the right software plus I'm not a GEEK lol. I have problem yesterday when I place the header that I made, hands up I'm done!
Until yesterday afternoon madam Carlota (she's a Layout Designer; customizing blogger layouts) IM me about something until I asked her to look at my header, and she end up doing my layout.
It is so pretty I like it so much, I was surprise that she place my images, she really knows what I like and what I don't like. She also made me EntreCard logo, when she showed me the look of my new blog my grin was from ear to ear, it makes me giggle.

Weekend fishing!

Hooray! It's weekend again and they might go fishing on Sunday, supposedly fishing will be on Saturday but mistress was not here yet. She's been to the shop for service for 5 days now, another problem with mistress is the steering wheel, she only turn good going right but it's so hard turning her left. They said she will be done today but it's late in the afternoon already and they didn't call yet so that means she might be home tomorrow morning.
I want to go fishing with them but hubby said I might just ruin the trip, because they will go as early as 5am and will be back at around 2 or 3 pm, that will be a long fishing at the ocean and I might not handle it, and I'm sure I can't stay that long. I might come home as thin as "olive oil" (popeye GF) due to throwing up lol. That sound's a good slimming method lol lol.

What I'm up to?

I have so many work load to be done! Since Tuesday I'm doing paper works and accounting stuff for our small business and it's driving me crazy lol. The accountant is introducing me to so many softwares and it's like biting food more than I could chew!. Though I can learn fast experimenting and learning it my self but it's making me more confused when the accountant suddenly call me and tell me 2 days dealine for what he wants me to do! Accounting is not an easy JOB! since yesterday I was figuring out why my work on the programs is not balance as what on the bank and credit statements, which already making me frustrated. But Thanks GOD finally I figure it out and do it last minute, now I can say accounting is not that hard IF you know what you are doing and need to do lol.

BEEF Shawarma wraps

I really missed shawarma wrap, I used to but it at shawarma kiost in the mall back home. Actually its a Persian food, it consist of cook beef strips, fresh tomatoes sliced, cucumber and onions with hot sauce and a little seasoned plain yogurt. It's so yummy.
Ingredients and procedure:
Fita bread or tortilla wraps
hot souce

marinate and cook
1 lb chunk steak, cut in stripes
1 cup plain yogurt
2 cloves garlic, crushed
1 teaspoon pepper
1/2 teaspoon salt
1 teaspoon allspice

when beef is cooked, warm a little fita bread on stove top then assemble in the middle of fita bread or tortilla wrap the beef, cucumber, tomatoes, onions pour hot sauce as you desired and about table spoon of plain yogurt an wrap, enjoy.

First Pay Check!

Today I get my first pay check lol, actually I only work for our accountant during weekend or when he needs my help doing clerical jobs and stuff for him and at the same time learning accounting stuff and doing book keeping. I think he don't need to pay me because I'm learning, nah actually I'm doing thing for his other clients too that why he's paying me. And he just gave me a check today for my 8 hours work lol.

Cocktails for Summer

What summer cocktail is good and bad?
Bad: Frozen margarita; because they're so refreshing, it's easy to quench summer time thirst with lots of this tart treats. But beware: with tons of sugar in the margarita mixture alone, they can add up to weight gain.

Just showing off some of his toys, this things cause him a fortune, and for two days on sea no catch. I ask him what did you get he answer " I catch some fun", ok then. Hope next time they will catch fish and fun.
He is not in the mood since yesterday and we didn't talk until today, I don't care I didn't do anything wrong. If he still don't talk to me tonight who cares! lol

Weekend Job

Last Sunday is my first day of work; actually it's just a part time job during weekend at our accountant's office. I'm doing sorting stuff and also he is teaching me some basic accounting things. Good, his paying me per hour at the same time his teaching me things that I need to learn to handle our own books. Its fun working with him, I've learn a lot of things and hoping that this will last long.
Anyway, his office is by town at Koko Head, and since my husband went fishing on Sunday, I end up taking the long bus ride to Waikiki, I left home almost 11am and suppose to be on his office by 2pm because I have to work from 2-6pm, and guess what time I arrive at his office? Almost 3pm, Sunday bus schedule is worse lol. But at least I arrive there.

Maybe next week I'll be working on Saturday morning, I might take the bus again.

My UnBirthday Cake

All my friends and visitors can take a piece of my cake it's chocolate fudge cake. How I wish the frosting was peanut butter chocolate and I must love it so much lol.
I didn't bake my own cake because I'm not felling well on my birthday week, I decided to buy one layer regular size cake and I want chocolate cake, it's so good though I'm the only one eating it and it's still half until now, hubby is not so much on cakes especially with frosting.

Busy Monday

Actually this is my typical Monday, where I'm juggling house hold chores and my blogging. I supposed to wake up as early as 5am, I set my cell phone alarm clock last night, but I was worn out yesterday and it’s impossible for me to get up early. I was up at 6:30 preparing breakfast of my two boys then went right away to my computer checking for some task. When the boys are gone, I do the laundry and some house cleaning, and baking goodies in the afternoon. I’m tired today; actually I woke up this morning feeling so tired. Hope tomorrow is a better day for me.


Generally called Suman, but in Visayas area they call it bud-bud. I have craving for this Filipino delicacy and I forgot how to make it. I asked couple friend online how they made this, based on what they told me, I come to my own measurements.

3 cups sweet rice
1 can coconut milk
1 tsp salt
1-1/2 cup sugar, add more sugar if you want it sweeter
ginger cut in stripes, just enough to have a gingery taste
banana leaves

Soak sweet rice for 12-18 hours or overnight, strain sweet rice. In a pot or rice cooker mix all ingredients except banana leaves. Cook sweet rice, when cook cool for 15 minutes the start wrapping sweet rice on banana leaves, cut banana leaves about 5x10 inch size, place 2 tbsp of cook sweet rice and start rolling it to form elongated round shape, wrap and fold the edges.
Place all wrap sweet rice in a big pot and pour water until all are covered with water, cook for 1 hour and done.
